Knowing about the people behind our food is as important to us as what’s on your plate. After all, we wouldn’t exist without these guys!
Michelin-starred Chef and co-founder Tommy Banks is the brains behind these menus, bringing his years of experience working in fine-dining to bring luxury menus to life at home.
Tommy comes from a strong farming background, and it’s this knowledge that gives him a unique understanding of food. His parents Tom and Anne still run the day-to-day of Oldstead Grange Farm, growing the menus for Made In Oldstead, The Black Swan and Roots. You’ll often see Tom out and about on his tractor, while it’s not uncommon to see Anne up at dawn, tending to the vibrant produce growing in our restaurant garden.
And if the produce doesn’t come straight to us, it’ll make its way to our production team – Richard and Chris – who work to preserve our ingredients from turning them into oils, sugars, and vinegars, or dehydrating, fermenting, or pickling them for us to use later. This means we can use them in truly unique ways, and throughout all the seasons.
And if Richard and Chris aren’t busy in the kitchen, they’re out on the land themselves, foraging from nature’s bounty.
Leading our kitchen is Head Chef Tom, who has worked alongside Tommy for years. Working at both The Black Swan and Roots. Tom joined Made in Oldstead to bring his fine-dining knowledge and creativity to your homes. Tom leads a strong kitchen brigade, from Jonny our development chef to Emmaline our Head of Pastry, Robert our Head of Production and Piers our Head of Savoury.
And what about all the amazing cocktails and wine, I hear you ask! You can thank James for that, Tommy’s brother, who heads up all drinks production across the business. This means he not only curates our incredible wine pairings (and is the brains behind Banks Brothers canned wine), but he is directly responsible for the delicious bottled cocktails we create.
And we of course can’t forget Matt, Tommy’s right-hand man and business partner, who keeps everything running smoothly. He works with our incredible back-of-house team led by Luke our Operations Manager and includes everyone from Steph and Eleanor our customer experience team, to Andy and Dilan our delivery and logistics team, and Jack and Richard who are in charge of all things inventory.
And we’ve just touched the surface of all the incredible people that make Made In Oldstead what it is. Impressive, right?
