Duck Liver & Blackcurrant

A decadent croustade filled with duck liver parfait. Finished with a blackcurrant compote and a dusting of blackcurrant powder.

Goat’s Cheese, Wild Garlic, Pickled Walnut

Brioche toast topped with a savoury goat’s cheese custard, pickled walnut ketchup and Oldstead wild garlic powder.

Tomato, Lovage, Fennel

A fresh beef tomato ‘steak’ topped with a tomato ‘tartare’, lovage emulsion and fennel pollen.

Beef, Onion, Carrot

Braised beef cheek with a laminated ale and onion brioche. Accompanied by pickled carrot ribbons and peppercorn sauce.

Lamb, Kohlrabi, Hispi

Loin of Yorkshire lamb and pressed lamb belly with a herb gastrique glaze. Served with charred hispi cabbage topped with pickled kohlrabi and fermented turnip purée, finished with a lamb jus.

Elderflower, Sheep’s Yoghurt, Honeycomb

Elderflower parfait and sheep’s yoghurt topped with caramelised white chocolate shards, honeycomb pieces and a drizzle of elderflower honey.

Crapaudine Beetroot

A savoury-sweet conclusion of ‘chewy’ Crapaudine beetroot cooked in beetroot syrup and finished in beetroot sherbet.

Inspired by dishes from The Black Swan’s celebrated tasting menu, this six-course menu showcases some of the restaurant’s most iconic seasonal ingredients, including wild garlic, lovage, elderflower and Crapaudine beetroot.
