Product Description: Starter

Stuffed chicken wing with a fermented chilli buffalo and chicken fat ranch, accompanied by dill-pickled celery.

Main

Venison en croûte with wild garlic mashed potato, miso honey-glazed carrots and a rich Borderlaise Sauce. Garnished with foraged wild garlic capers.

Dessert

“Mont Blanc” chocolate chestnut parfait topped with crystallised chestnuts, woodruff mousseline and a salted Pedro Ximenez syrup.

Thom Bateman is a British chef known for his modern, nostalgic approach to fine dining and his rapid rise in the UK hospitality scene. He began at 18 as an unexpected head chef with no formal training, setting the tone for his bold, self-driven career.

After stepping away in his early twenties, he returned through social media, building a strong following with his “bbox food” content. This led to the launch of his debut restaurant, The Flintlock at Cheddleton, focused on seasonal British produce and modern technique.

A long-time industry friend of Tommy Banks, Thom has since built a reputation for creative, accessible fine dining across restaurants and food projects.
