The James Martin Menu
A one-off collaboration between James Martin and Tommy Banks, this limited-edition menu won’t be repeated. Expect elegant canapés, a Roscoff onion velouté starter, and scallop risotto with lemongrass. The main event is our iconic Beef Wellington with sauce Périgourdine, followed by a choux dessert with apple compote and brown sugar crumble. Finished with petit fours, it’s a James Martin dining experience at home – only available for a short time.

This seven-course menu is a true journey through Tommy Banks’ Preservation Season. Expect elegant canapés, a seasonal carrot amuse-bouche, sourdough with cep butter, and a vibrant beetroot starter. The highlight is our signature salt-aged Beef Wellington with all the trimmings, followed by chocolate fondant with hay mascarpone and a plum finish. Our vegetarian Preservation Season menu brings together seven indulgent courses, from celeriac & truffle canapés to a carrot velouté amuse-bouche, sourdough with whipped herb butter, and a vibrant beetroot starter. The main event is a Tunworth & potato Wellington with rich mushroom jus and truffle. Finish with chocolate fondant, macarons and paired wines throughout – a truly celebratory vegetarian feast.

Rooted in Northern tradition and reimagined for today’s table, this limited-edition pie celebrates Bold Bean Co.’s British-grown carlin peas, a heritage ingredient once eaten on Bonfire Night across the North.
Inspired by a cowboy-style bean stew, our chefs have created a deeply flavoured vegetarian pie filled with smoky tomato sauce and Bold Bean’s nutty, meaty carlin peas. The filling is rich, hearty and gently spiced, then wrapped in our golden, all-butter pastry.
