THE PRESERVING SEASON
As the harvest reaches its height and the pace of the growing season begins to soften, our attention turns to preservation. This is a time of careful craft; capturing the fleeting abundance of the Kitchen Garden, hedgerows and surrounding landscape, ensuring the flavours of today can be enjoyed long after the season has passed. Fermenting, pickling, curing and drying become part of the rhythm of the kitchen, each technique rooted in tradition and driven by a deep respect for the land.
From late summer into autumn, preserving is woven into everything we do at Made In Oldstead. Every jar, bottle and ferment tells the story of a season at its peak, extending the life of our harvest and celebrating nature’s generosity well beyond its natural window. It is an expression of foresight as much as flavour, allowing the landscape to remain present on every table throughout the year.
