Gravadlax salmon and crab rillettes served with whipped cream cheese, Hopical Storm slaw, pickled beetroot, dill emulsion, candied fennel and crispy rye & caraway croutes, perfect for sharing.

Paired with Banks Brothers Dry Riesling No. 20

Main

Salt-aged Beef Wellington served with pigs in blankets, heritage carrots, braised red cabbage, Yorkshire puddings, bacon & chestnut sprouts, horseradish crème fraiche, duck fat roast potatoes and red wine jus.

Paired with Banks Brothers Syrah Mourvèdre No. 1.1

Dessert

Choux bun filled with Christmas cake parfait in the centre, surrounded by white chocolate ganache, topped with Mirabelle plum gel, candied hazelnuts and finished with a dusting of Douglas fir sherbet.
