A four course menu including wine pairing celebrating this year’s prestigious Wimbledon Championship tournament, in homage to Tommy’s iconic Great British Menu dishes.

Sourdough, Sour Butter, Cheese Custard

To begin, a whole loaf of Haxby sourdough served with our famous sour butter and cheese custard dusted in shallot powder.

Halibut, Strawberries, Cream

Tommy’s winning fish course in 2017, in recognition of the 140-year anniversary of Wimbledon; Pan-roasted halibut, umeboshi strawberries and fennel pollen served with fresh strawberries, Golden Boldor beetroots and turnip dressed in herb and elderflower vinegar. Finished with a fish velouté split with chive oil.

Banks Brothers Grenache Blanc No. 5

Lamb Guard of Honour, Turnip, Mint

The meat course from the 2017 Great British Menu series. A rack of Yorkshire lamb accompanied by fermented turnip, mint vinegar gel and lamb fat steamed potatoes with a smoked butter crumb. Served with fermented turnip puree and finished with a drizzle of lamb fat-infused jus.

Banks Brothers Pinot Noir No. 7

Haytime

Honey-flavoured pastry topped with hay, elderflower and meadowsweet custard and a raspberry gel. Finished with cream cheese ice cream and fresh raspberries, and garnished with oxalis leaves. Inspired by Tommy’s 2018 ‘Haytime’ dessert on the show.
