Hen of the Woods, Mushroom, Kombu
Pickled Hen of the Woods mushrooms accompanied by caramelised whey and a rich mushroom puree. Served in a tart case made with the umami flavours of kombu seaweed.
Salsify, Cauliflower, Trompettes
Pan-fried salsify served with confit potatoes on a bed of creamy cauliflower puree. Accompanied by Trompette mushrooms, smoked cauliflower and finished with a drizzle of parsley sauce.
Douglas Fir, Lemon Verbena, White Chocolate
A twist on Tommy’s iconic dessert: Douglas fir parfait served with dots of punchy lemon verbena gel and curd ,and finished with pieces of aerated white chocolate.
