Tomato, Basil, Rye
Tomatoes in an Oldstead elderflower oil served with whipped goat’s curd, and smoked rye croutes. Finished with basil oil and a dusting of tomato powder.
Optional wine pairing: Banks Brothers Grenache Blanc No. 5
Gnocchi, Courgette, Chive
Herb gnocchi, steamed onions in a lemon verbena oil and charred courgettes served with a courgette and basil puree and basil oil. Finished with chive sauce and generous gratings of Berwick Edge gouda-style cheese.
Optional wine pairing: Banks Brothers Chenin Blanc / Semillon No. 10
Blackcurrant & Lemon Verbena
A mascarpone sponge filled with blackcurrant compote and topped with whipped lemon verbena cream and shards of blackcurrant and verbena meringue. Served with a blackcurrant and verbena consommé.
