Herb gnocchi with an ox cheek and Sungold ragu followed by butter poached halibut and finishing with a twist on Tommy’s famous Douglas fir and lemon verbena dessert.

Gnocchi, Sungold, Basil

Herb gnocchi with an ox cheek and Sungold tomato ragu. Served with pickled tomatoes, chillies and Cais ne Tire cheese from The Courtyard Dairy. Finished with a confit garlic and herb noisette, and a drizzle of basil oil.

Optional wine pairing: Banks Brothers Albariño No. 9

Main

Halibut, Crab, Elderflower

Butter poached halibut and a brown crab bouillabaisse served with a fennel and elderflower remoulade and confit potatoes. Accompanied by fresh peas dressed in an elderflower vinaigrette and finished with a dusting of fermented Oldstead pepper powder.

Optional wine pairing: Banks Brothers Grenache Blanc No. 5

Dessert

Douglas Fir, Lemon Verbena, White Chocolate

Douglas fir mousse and lemon verbena curd served alongside a sheep’s yoghurt parfait. Finished with white chocolate shards and a caramelised white chocolate crumb.

Optional wine pairing: Banks Brothers Riesling No. 4
