How To Make Lavender Honey

It’s a staple in our Oldstead larder and the *perfect* way to preserve the glut of blooms grown in the Black Swan Garden every year. Lavender honey is super easy to make, and great weekend activity to get stuck into whilst enjoying the beautiful summer sunshine.

The Recipe

You will need:

  • 500g good quality local honey
  • 50g lavender flowers, picked from the stem
  • 1 x small saucepan
  • 1 x mason jar

To make lavender honey:

  1. Combine the picked lavender and honey in the mason jar and seal the lid.
  2. Leave at room temperature for 5 days before straining to remove the lavender flowers.
  3. Store in a cool, dark place and use as desired.
